Chitosan stands as a distinctive basic polysaccharide produced through the N-deacetylation of chitin under alkaline conditions. Its maleic-anhydride.html">main structure is made up of β-(1-4)-2-acetamido-2-deoxy-d-glucose.html">2-deoxy-D-glucose repeating units. Ranking second only to cellulose in natural abundance, this biopolymer exists widely in crustacean shells and fungal cell walls. It is classified as a copolymer formed by N-acetyl-D-glucosamine and D-glucosamine segments. When the amino group (-NH2) at the C-2 position of D-glucosamine becomes protonated, chitosan dissolves easily in acidic aqueous solutions and turns into a polyelectrolyte. The presence of amino groups gives chitosan wider application potential than raw chitin. It features excellent biodegradability, strong biocompatibility, and natural antibacterial activity. As the only pseudo-natural cationic polymer, chitosan is applied across numerous industries. It is typically manufactured by deacetylating α-chitin in 40%–50% alkaline solution at 100–160 °C for several hours, yielding products with a deacetylation degree (DD) as high as 0.95.
