Phosphoric acid is an inorganic acidulant manufactured by burning phosphorus in excess air to form phosphorus pentoxide, which is then hydrated to produce orthophosphoric acid at various concentrations. It is a strong acid fully soluble in water, and its salts are known as phosphates. It adds tartness and acidity to cola and root beer beverages, acts as a synergistic antioxidant in vegetable shortenings, helps maintain proper pH and supply phosphorus in yeast production, and serves as an acidulant in cheese production. It is commonly referred to as orthophosphoric acid.
