Ammonium ferric citrate industrial grade purity ≥ 99%, appearing as brownish red amorphous powder, odorless with faint iron‑like taste. It decomposes when heated at melting point; boiling point also decomposes. Vapor pressure is negligible at 25℃; relative density is 1.80 at 20℃. It is highly soluble in water but insoluble in ethanol, ether and chloroform. The product is stable and incompatible with strong acids, strong oxidizers and reducing agents.

Ammonium ferric citrate serves as a food iron fortifier with better absorption than inorganic iron. In China, it is allowed in salt and sandwich sugar at 4000–8000 mg/kg; in iron‑fortified cereals and products (daily max 50 g): 1200–1350 mg/kg; dairy and infant foods: 400–800 mg/kg; cereals and products: 160–330 mg/kg; beverages: 70–140 mg/kg.
