Potassium bromate is the potassium salt of bromate. It has been widely used in the United States as a flour improver to strengthen dough and boost rising volume. As an oxidizing agent, it serves as a food additive widely applied in bread production. Research has identified it as a potential carcinogen. Oral administration causes carcinogenicity in rats and nephrotoxicity in humans and laboratory animals. Studies confirm KBrO3 induces renal cell tumors, peritoneal mesotheliomas, and thyroid follicular cell tumors. Mechanistic research shows it acts as a complete carcinogen with both initiation and promotion effects on renal tumor formation in rats.

Product Application
Potassium bromate (KBrO3) is mainly used as a flour maturing agent and dough conditioner. It is regarded as one of the most effective dough conditioners in baking. Since 1990, scientific evidence has suggested bromate may be carcinogenic. Responding to health risks, the FAO and WHO joint committee removed potassium bromate from the list of authorized flour treatment additives.
For non-food uses, KBrO3 functions as an oxidizing agent, primary standard, and brominating reagent in analytical chemistry. It is also used in hair neutralizers for home perms at 5–25% concentration (pH 4–9), often combined with sodium bromate, sodium perborate, or hydrogen peroxide.
