When dissolved in water, potassium sorbate ionizes to release sorbic acid, the active component that suppresses yeast, mold and certain bacteria. It is commonly used at concentrations ranging from 250 ppm to 1000 ppm in cheese, dips, yogurt, sour cream, bread, cakes, pastries and fillings, baking mixes, doughs, icings, fudges, toppings, beverages, margarine, salads, pickled vegetables, olives, fruit products, sauces, smoked and salted fish, confectionery and mayonnaise.
