Tetrasodium pyrophosphate is a mildly alkaline coagulant, emulsifier, and sequestrant with a pH value around 10. It dissolves moderately in water, with solubility near 0.8 g per 100 mL at 25 °C. It is used to thicken instant pudding mixes, control melting and fat separation in cheese, improve dispersion in milk and chocolate drink powders, and stop crystal formation in canned tuna. It is also known as sodium pyrophosphate, tetrasodium diphosphate, or TSPP.
