Carrageenan industrial grade has a purity of ≥99%, appearing as white to light yellow powder with no odor. Its melting point decomposes when heated, and boiling point also decomposes. Vapor pressure is negligible at 25℃, relative density is 1.50 at 20℃. It dissolves in water (more easily in hot water) and does not dissolve in ethanol, ether or most organic solvents. Carrageenan is a hydrocolloid extracted from red seaweeds including Chondrus crispus (Irish moss), Gigartina, and Eucheuma. Chondrus crispus produces kappa and lambda carrageenans. Gigartina produces kappa and lambda carrageenans. Eucheuma produces kappa and iota carrageenans.
