Products Description
2-Methyl butyric acid presents a pungent and sharp odor close to that of Roquefort cheese with a strong biting taste. When diluted to low concentrations, it delivers a nice and fruity flavor. It can be produced through thermal decarboxylation of methyl ethyl malonic acid or by oxidation of fermented amyl alcohol also called fusel oil. It is widely applied as a flavoring component to build butter, cream and cheese notes, and provides the acyl group for synthesizing related flavor esters.
