2-Methyl butyric acid presents a pungent and sharp odor close to that of Roquefort cheese with a strong biting taste. When diluted to low concentrations, it delivers a nice and fruity flavor. It can be produced through thermaleic-anhydride.html">mal decarboxylation of methyl ethyl malonic acid or by oxidation of fermented amyl alcohol also called fusel oil. It is widely applied as a flavoring component to build butter, cream and cheese notes, and provides the acyl group for synthesizing related flavor esters.
