Dimethyl disulfide CAS#624-92-0
Dimethyl disulfide features a strong, diffusive onion‑like scent and does not cause tearing. While many people find its concentrated odor unpleasant, when properly diluted, it can emit a pleasant aroma. This substance is widely blended with other flavoring agents in foods such as baked goods, cheeses, frozen dairy items, meats, soups, savory flavors, fruit flavors, soft candies, gelatin desserts, puddings, alcoholic drinks, and non‑alcoholic beverages.

Product Application
Industrially, dimethyl disulfide serves as a sulfiding agent to catalyze reactions in oil refineries and other sectors. It has a low flash point of 16 °C (61 °F), creating fire risks during refining operations. Thanks to its strong odor and low flash point, it is usually stored in sealed containers under nitrogen pressure.
Dimethyl disulfide gives off a sulfurous smell similar to garlic and decomposing fish. Such sulfur compounds are often added to natural gas and propane to detect leaks. As a result, the smell of DMDS fumigation may be confused with a gas leak. DMDS has an odor threshold of roughly 7 ppb, which is about eight times lower than the EPA safe level of 55 ppb.
