This product acts as a wetting agent and emulsifier with limited water solubility, dissolving at roughly 1 gram per 70 milliliters of water. It helps fumaric acid dissolve more easily in powdered fruit beverages. It can stabilize chewing gum formulations at a maximum usage level of 0.5% by weight. In canned milk, it boosts and preserves flavor stability throughout shelf life. It also serves as a processing aid in raw sugar production. It is often referred to as sodium dioctylsulfosuccinate.
