DL-Tartaric acid is a colorless crystalline solid that dissolves in water and alcohol, featuring a typical sour taste with a melting point of about 170°C (338°F). Naturally occurring tartaric acid usually exists in L-configuration based on the absolute structure of D-glyceric acid. L-tartrate solutions are dextrorotatory, so they are named L(+)-tartrates. It is also called dihydroxy succinic acid. When mixed with sodium bicarbonate, it works as a leavening agent in food production. In pharmaceuticals, it is used to synthesize tartar emetic, an expectorant in cough syrups.
