It emits an intensely sweet caramel‑like aroma, and its flavoring potency is 4 to 6 times stronger than maltol. Various synthetic routes are available for its production. In a typical one‑pot synthesis, α‑ethylfurfuryl alcohol undergoes halogenation to form 4‑halo‑6‑hydroxy‑2‑ethyl‑2H‑pyran‑3(6H)‑one, which can be directly hydrolyzed in aqueous solution to yield ethyl maltol without isolation.
Ethyl maltol features a persistent sweet, fruity odor and a pleasant sweet‑fruity taste with an initial mild bitter‑tart note, followed by rapid flavor fading. Its flavor enhancement effect is 4–6 times more powerful than maltol.
