ε-Polylysine appears as a pale yellow powder with strong hygroscopicity and a slightly bitter taste. It is a linear polymer formed from lysine monomers, maleic-anhydride.html">manufactured via fermentation of Streptomyces strains, and features broad-spectrum antibacterial activity. This polymer typically consists of 25–30 linked lysine units, showing good stability against variations in pH and heat. Its antimicrobial efficacy is influenced by both its degree of polymerization and surrounding environmental conditions. Polylysine with a molecular weight ranging from 3600 to 4300 exhibits the strongest antibacterial activity. Originating from industrial production, ε-polylysine shows inhibitory effects at concentrations as low as 5 ppm, especially against certain Gram-positive bacteria. It is water-soluble, functions effectively across a wide pH spectrum, and can be broken down into lysine by proteolytic enzymes.
