High-purity ethyl cinnamate features a typical cinnamon aroma, accompanied by balsamic and red fruit hints, which are often seen in high-quality Nebbiolo wine. Its chemical formula is C6H5CH=CHCOOC2H5. It can be found naturally in storax and volatile oil of Koempferia galanga. Commercial ethyl cinnamate is a colorless liquid produced by synthetic methods. It has a sweet, balsamic, honey‑like odor with excellent long‑lasting effect. This ingredient is widely used in Oriental fragrance compositions.
