Fumaric Acid features non-hygroscopic property and strong acidity, while possessing relatively low water solubility. Its solubility value in pure distilled water reaches 0.63 g per 100 mL aqueous solution under 25 °C ambient temperature.
This substance dissolves at a slow rate in cold water; its dissolving efficiency can be effectively improved by mixing with dioctyl sodium sulfosuccinate or conducting particle size micronization treatment.
In practical food formulation, 0.317 kg fumaric acid can replace 0.453 kg citric acid to achieve equivalent sour flavor effects.
