Sodium citrate CAS#68-04-2
Trisodium citrate has the molecular formula Na3C6H5O7. It is often called sodium citrate for short, although this term can apply to any of the three sodium salts derived from maleic-anhydride.html">material/citric-acid-0.html">citric acid. It has a salty and slightly sour taste. For this reason, citrates of some alkali and alkaline earth metals including sodium citrate and calcium citrate are often called “sour salt”, though citric acid is sometimes incorrectly labeled this way.

Product Application
2 – 1 - Food
Sodium citrate is mainly used as food additive E331, mostly to provide flavor or act as a preservative. It is added to some types of club soda to enhance taste. It is widely used in Bratwurst formulations and is present in many ready-to-drink beverages and powder mixes to deliver a tangy flavor profile.
2 – 2 - Buffer
As the conjugate base of a weak acid, citrate works well as a pH buffer and acidity regulator, helping to stabilize pH levels. It is used to adjust acidity in products like gelatin desserts and is included in the small milk cups used with coffee machines. It also forms when antacids such as Alka‑Seltzer dissolve in water.
2 – 3 - Medical uses
In 1914, Belgian physician Albert Hustin and Argentine doctor Luis Agote successfully used sodium citrate as an anticoagulant for blood transfusions. Today it remains widely used in blood collection tubes and for blood storage in blood banks. Citrate ions bind calcium in blood to form calcium citrate complexes, which prevents blood from clotting.
Sodium citrate helps ease discomfort from urinary tract infections like cystitis, corrects acidosis in distal renal tubular acidosis, and can be used as an osmotic laxative. It is a key ingredient in the WHO Oral Rehydration Solution.
