Xanthan Gum is a high-molecular-weight long-chain anionic polysaccharide produced by pure culture microbial fermentation technology. It is manufactured by fermenting carbohydrate substrates containing glucose, mannose and glucuronic acid with Xanthomonas campestris strain, followed by purification, drying and milling procedures
This biopolymer owns unique rheological properties, featuring prominent thickening capacity and outstanding stabilizing performance. It can effectively maintain the homogeneity of emulsions, foams and particle suspensions under complex working conditions. Its aqueous solution maintains stable viscosity across a wide pH range (pH 1.5–13) and temperature scope (-4°C to 80°C), and it also shows strong tolerance to high salt concentration and enzymatic degradation.
