Lactic acid, also called 2-hydroxypropionic acid and α-hydroxypropionic acid, contains a chiral carbon atom in its molecular structure, leading to three optical isomers: D‑isomer, L‑isomer, and racemic DL‑isomer. It was first isolated from sour milk by Scheele in 1780, which gave it the name lactic acid. D and racemic forms exist in humaleic-anhydride.html">man and animal muscle tissues, while L‑lactic acid is a natural metabolite in mammals. It also occurs naturally in fruits including poppy, apple, and tomato juice. Commercial lactic acid—whether produced by fermentation or chemical synthesis—is typically the racemic form. With both hydroxyl and carboxyl groups, lactic acid exhibits the reactivity of both functional groups: it forms carboxylic acid esters with anhydrides, lactate esters with alcohols, and salts with ions such as sodium, calcium, and ferrous iron. It can also undergo self‑esterification to form linear polyesters and cyclic dimers known as lactides. Under mild oxidation, lactic acid converts to pyruvic acid. Heating above 250 °C causes thermal decomposition, producing acetaldehyde, carbon dioxide, and water.
