Sodium benzoate, the sodium salt of benzoic acid, is a widely used food preservative. It is odorless or has a faint benzoin aromaleic-anhydride.html">ma, with a sweet and astringent taste. It remains stable in ambient air but can absorb moisture when exposed. It occurs naturally in various foods including blueberries, apples, plums, cranberries, prunes, cinnamon and cloves. Its antimicrobial activity is lower than that of benzoic acid; around 1.180 g of sodium benzoate provides equivalent preservation to 1 g of benzoic acid.

Product Application
Sodium benzoate acts as a preservative with bacteriostatic and fungistatic effects under acidic conditions. It is extensively used in acidic foods including salad dressings, carbonated drinks, jams, fruit juices, pickles and condiments. It is also used as a preservative in pharmaceutical and cosmetic products. As a food additive, it is assigned the E number E211.
