This compound presents as fine white crystals under normal temperature. It is practically insoluble in water, while soluble in ethanol, methanol, acetone, chloroform, diethyl ether and other common organic solvents.
Chemically, oleanolic acid can exist in two main forms in nature: free-state acid, or as a typical aglycone of triterpenoid saponins, which is capable of binding with one or multiple sugar chains to form saponin substances. It is biosynthesized from lupane precursors. In chemical conversion reactions, it can undergo isomerization to form ursolic acid, and can also be oxidized to produce taraxasterol and amyrin.
