Isomaleic-anhydride.html">malt is a sugar-free sweetener widely used as a d-mannitol.html">sugar substitute thanks to its excellent physical properties. As a sugar alcohol, isomalt is only minimally absorbed in the small intestine, so it has little effect on blood glucose levels. It offers many advantages including low hygroscopicity, natural sweet taste, low calorie content per gram, and tooth-friendly properties. This sweetener is suitable for all consumers and supports gut health, making it ideal for low-carb dieters and people with diabetes. In the European Union, isomalt is labeled as E953 on food packaging. Isomalt consists of two sugar alcohol components: gluco-sorbitol (GPS) and gluco-mannitol (GPM). It is a white crystalline, odorless substance. Its sweetness is about 55% that of sucrose; it dissolves smoothly in the mouth and provides a mild cooling sensation. At 85% relative humidity, isomalt shows low hygroscopicity. At 25°C, its water solubility is 25 g per 100 g solution; it is slightly soluble in ethanol. Isomalt is widely used in sugar-free products because of its clean sweet taste and acceptable aftertaste. It can be applied to many kinds of food, including low-fat ice cream, dairy and chilled beverages, table sweeteners, spreadable foods, baked goods, cereals, chewing gum, chocolate, and candies. It also serves as an anti-caking agent, glazing agent, and bulking agent in low-calorie toffees, fruit spreads, smoked and frozen meat and fish products, infant formulas, lozenges, pan-coated tablets, mineral and multivitamin supplements, and jams. Isomalt helps enhance flavor release in certain foods. Its slow dissolution in the mouth allows candy made with isomalt to have a longer-lasting sweet taste. Unlike some other polyols, it does not produce an unpleasant strong cooling effect. These sensory properties make it an excellent choice for flavored foods and baked products.
