Various salts of ascorbic acid, including sodium ascorbate, potassium ascorbate and calcium ascorbate, are collectively referred to as ascorbates. These derivatives are extensively applied as effective preservatives in the food industry.

Through esterification reaction, ascorbic acid can be modified to gain lipophilic properties. Its ester compounds with palmitic acid and stearic acid — ascorbyl palmitate and ascorbyl stearate — serve as high-performance antioxidants. These lipid-soluble derivatives are widely used in food processing, pharmaceutical formulations and cosmetic production.

Solubility: Highly soluble in water; slightly soluble in ethanol; practically insoluble in ether, benzene and other non-polar organic solvents

Chemical Stability: Sensitive to light, heat and air. It is easily oxidized and discolored when exposed to oxygen, especially in aqueous solutions. Long-term storage under high temperature or strong light will accelerate its deterioration.
