Fumaric Acid is a non‑hygroscopic, highly acidic acidulant with low solubility. Its solubility in distilled water is 0.63 g per 100 mL at 25 °C. It dissolves slowly in cold water, but solubility can be enhanced by blending with dioctyl sodium sulfosuccinate or reducing particle size. Approximately 0.317 kg of fumaric acid can replace 0.453 kg of citric acid.
